- Pat the chicken breasts dry. If any breast is very thick, pound it gently to an even thickness so the pieces cook more uniformly.
- Place the chicken breasts in the slow cooker. Sprinkle both sides with lemon-pepper seasoning, garlic powder, paprika, and kosher salt only if the seasoning blend is not already salty.
- Pour the chicken broth around the chicken, then drizzle the breasts with olive oil or melted butter. Add the lemon zest and 2–3 tablespoons of lemon juice.
- For extra lemon flavor, arrange a few lemon slices on top of the chicken. Cover the slow cooker and cook on LOW for 4–6 hours or HIGH for 2–3 hours, avoiding repeated lid lifting.
- Check the thickest part of the chicken with an instant-read thermometer. The chicken is ready when it reaches 165°F.
- Let the chicken rest for 5 minutes before serving. Spoon some cooking liquid over the chicken, remove lemon slices if their peel has become bitter, and finish with chopped parsley.
Notes
Lemon-pepper seasoning blends vary in saltiness, so use low-sodium broth and add kosher salt only when needed. Chicken breasts may become dry if cooked far beyond doneness, so begin checking smaller breasts around 4 hours on LOW. Boneless chicken thighs may be substituted at a 1:1 weight ratio and are more forgiving.
