Easy Crockpot Lemon Pepper Chicken

  • 4 breasts, about 1½–2 pounds total Boneless, skinless chicken breasts
  • ½ cup Low-sodium chicken broth
  • 2 tablespoons Olive oil or melted butter
  • 1–2 tablespoons Lemon-pepper seasoning
  • 1 teaspoon or 2 teaspoon or cloves Garlic powder or minced garlic
  • ½ teaspoon, optional Paprika
  • ½ teaspoon, only if needed Kosher salt
  • 1 zest plus 2–3 tablespoons juice Large lemon
For Serving
  • 1 tablespoon, chopped and optional Fresh parsley

Step-by-Step
  1. Pat the chicken breasts dry. If any breast is very thick, pound it gently to an even thickness so the pieces cook more uniformly.
  2. Place the chicken breasts in the slow cooker. Sprinkle both sides with lemon-pepper seasoning, garlic powder, paprika, and kosher salt only if the seasoning blend is not already salty.
  3. Pour the chicken broth around the chicken, then drizzle the breasts with olive oil or melted butter. Add the lemon zest and 2–3 tablespoons of lemon juice.
  4. For extra lemon flavor, arrange a few lemon slices on top of the chicken. Cover the slow cooker and cook on LOW for 4–6 hours or HIGH for 2–3 hours, avoiding repeated lid lifting.
  5. Check the thickest part of the chicken with an instant-read thermometer. The chicken is ready when it reaches 165°F.
  6. Let the chicken rest for 5 minutes before serving. Spoon some cooking liquid over the chicken, remove lemon slices if their peel has become bitter, and finish with chopped parsley.

Notes

Lemon-pepper seasoning blends vary in saltiness, so use low-sodium broth and add kosher salt only when needed. Chicken breasts may become dry if cooked far beyond doneness, so begin checking smaller breasts around 4 hours on LOW. Boneless chicken thighs may be substituted at a 1:1 weight ratio and are more forgiving.
