Easy Crockpot Kielbasa and Green Beans

  • 1 pound Kielbasa or smoked sausage, sliced into 1/2-inch rounds
  • 1 1/2 pounds Small red or yellow potatoes, halved or quartered
  • 1 pound Fresh green beans, trimmed
  • 1 medium Yellow onion, sliced or chopped
Liquid and Seasoning
  • 1 cup Chicken broth
  • 2 tablespoons Butter
  • 1 teaspoon Garlic powder or minced garlic
  • 1/2 teaspoon Paprika, optional
  • 1/2 teaspoon Black pepper
  • to taste Salt

Method
 

Step-by-Step
  1. Wash and trim the green beans. Halve or quarter the potatoes into similarly sized pieces no larger than about 1 1/2 inches, then slice the kielbasa into 1/2-inch rounds.
  2. Optional: brown the kielbasa briefly in a skillet for extra color and deeper smoky flavor. This step is not required for food safety because smoked kielbasa is fully cooked.
  3. Place the potatoes and onion in the bottom of the slow cooker. Add the green beans and sliced kielbasa on top.
  4. Pour in the chicken broth, then add the butter, garlic powder or minced garlic, black pepper, and optional paprika. Hold back on the salt until the dish has finished cooking.
  5. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. The meal is ready when the potatoes are fork-tender and the green beans are cooked through.
  6. Taste the broth and add salt only if needed. Stir gently so the potatoes stay intact, then spoon the kielbasa, vegetables, and broth into bowls.

Notes

For canned green beans, drain two 14.5-ounce cans before using. Add them during the last 1 to 2 hours for a firmer texture, or add them at the beginning for softer, Southern-style green beans. Frozen green beans may be used in place of fresh.
