Easy Crockpot Italian Beef Recipe

Tender chuck roast slowly cooks with Italian seasoning, pepperoncini, pepperoncini brine, and beef broth before being shredded into flavorful sandwich filling. Serve it on toasted hoagie rolls with provolone and optional giardiniera.

  • 3-4 lb Boneless beef chuck roast, excess surface fat trimmed
Seasonings and Cooking Liquid
  • 1 packet, about 0.7-1 oz Dry Italian salad-dressing or Italian beef seasoning mix
  • 1 16 oz jar, use about 1/2 cup liquid Pepperoncini peppers with jar liquid
  • 1 cup Low-sodium beef broth
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried Italian seasoning or oregano
  • 1/2 teaspoon Black pepper
For Serving
  • 6-8 rolls Hoagie or Italian rolls
  • 6-8 slices, optional Provolone cheese
  • As desired Giardiniera

Method
 

Step-by-Step
  1. Trim excess surface fat from the chuck roast, keeping the roast whole. Place it in a 5- to 6-quart slow cooker.
  2. Sprinkle the Italian dressing or Italian beef seasoning mix, garlic powder, dried Italian seasoning or oregano, and black pepper over the roast.
  3. Add the pepperoncini peppers and about 1/2 cup of their jar liquid. Pour in the low-sodium beef broth; additional salt is usually unnecessary.
  4. Cover and cook on LOW for 8-10 hours, or until the beef is very tender and shreds easily with forks. HIGH generally takes about 4-5 hours, but LOW is preferred for the best texture.
  5. Shred the beef in the cooking liquid and remove large pieces of fat. Let the shredded beef rest in the juices for 10-15 minutes.
  6. Toast the rolls, add the Italian beef and optional provolone, then top with giardiniera. Spoon some cooking liquid over the sandwiches or serve it separately for dipping.

Notes

Use the pepperoncini liquid for the characteristic tangy flavor. Low-sodium broth helps control saltiness, and you can use only part of the seasoning packet if desired. Store leftover beef in its juices and reheat gently.
