- Wipe the mushrooms clean with a damp towel, or briefly rinse them and dry them thoroughly. Trim the stem ends, leaving small mushrooms whole and halving any larger mushrooms.
- Add the prepared mushrooms to the slow cooker. Place the butter, broth, minced garlic, thyme, oregano, basil, kosher salt, and black pepper over the mushrooms; the butter does not need to be melted first.
- Stir gently so the mushrooms are coated as evenly as possible. Cover and cook on LOW for 3 to 4 hours or on HIGH for 1 1/2 to 2 hours, stirring once halfway through if convenient.
- Check that the mushrooms are tender, then taste the cooking liquid and adjust the salt and pepper as needed. Stir in the fresh parsley or scatter it over the top just before serving.
- For a more concentrated sauce, transfer the cooked mushrooms and liquid to a skillet and simmer uncovered for 3 to 5 minutes. Serve warm as a side dish, over steak or chicken, with pasta, or on toasted bread.
Notes
Use a slow cooker that is no more than about two-thirds full so the mushrooms cook evenly. Refrigerate leftovers in a covered container and reheat gently; for thicker, richer sauce, reduce the cooking liquid in a skillet for 3 to 5 minutes.
