Teriyaki Sauce
  • 1 cup Bottled teriyaki sauce
  • 1/4 cup Low-sodium soy sauce
  • 1/4 cup Packed light brown sugar
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, grated
Thickened Sauce
  • 2 tablespoons Cold water
  • 1 tablespoon Cornstarch
Optional Garnish
  • 1-2 green onions Green onions, sliced
  • 1 teaspoon Sesame seeds

Method
 

Step-by-Step
  1. Place the chicken in the slow cooker. Whisk together the teriyaki sauce, low-sodium soy sauce, brown sugar, minced garlic, and grated ginger, then pour the mixture over the chicken.
  2. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the thickest part of the chicken reaches 165°F. Avoid continuing to cook the chicken for a long time after it reaches temperature.
  3. Transfer the cooked chicken to a plate and shred or slice it. Pour the slow-cooker liquid into a saucepan for stovetop thickening, or leave it in the slow cooker if using the alternate method.
  4. Whisk the cornstarch with 2 tablespoons cold water to make a smooth slurry. Whisk it into the sauce and simmer for 1–3 minutes until glossy and thickened, or add the slurry to the slow cooker during the final 15–20 minutes on HIGH.
  5. Return the chicken to the thickened sauce and gently stir to coat. Serve over white rice, brown rice, or noodles, then finish with sliced green onions and sesame seeds if desired.

Notes

Chicken thighs are more forgiving and stay juicier than breasts. Use low-sodium soy sauce because bottled teriyaki sauce is already salty, and taste the finished sauce before adding extra soy sauce or salt. Refrigerate leftovers in a covered container for up to 3 days and reheat gently.
