- Brown the ground beef in a skillet over medium-high heat until no pink remains, about 6–8 minutes. Drain excess fat thoroughly.
- Add the cooked beef, onion, garlic, potatoes, carrots, celery, broth, salt, pepper, dried parsley, and optional paprika to a 6-quart slow cooker.
- Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the potatoes and carrots are tender.
- Whisk the flour into the milk in a bowl until smooth. Stir the mixture into the slow cooker during the final 20–30 minutes of cooking.
- Add the shredded cheddar gradually, stirring after each addition until melted and creamy. Taste and adjust salt and pepper before serving.
Notes
Use beef broth for a stronger cheeseburger flavor or chicken broth for a milder soup. Keep dairy and cheese until the end, and serve with additional cheddar, cooked bacon, chopped green onions, or croutons if desired.
