Easy Crockpot Bubble Up Pizza

Refrigerated biscuit pieces bubble up with pizza sauce, mozzarella, pepperoni, and optional browned Italian sausage or ground beef for a comforting slow-cooker pizza casserole.

  • 2 tubes, 16-16.3 ounces each Refrigerated biscuit dough
  • 1 jar, 14-15 ounces Pizza sauce
  • 1 pound Italian sausage or ground beef, browned and drained
  • 2 cups Shredded mozzarella cheese
  • 1 cup Sliced or mini pepperoni
Seasoning
  • 1/2 teaspoon Italian seasoning
Optional
  • As needed Nonstick cooking spray

Method
 

Step-by-Step
  1. Brown the Italian sausage or ground beef in a skillet over medium heat until fully cooked. Drain the excess grease thoroughly and set the meat aside.
  2. Spray a 5- to 6-quart slow cooker with nonstick cooking spray. Cut each biscuit into 6 to 8 evenly sized pieces.
  3. In a large bowl, gently combine the biscuit pieces, pizza sauce, cooked meat, 1 cup of mozzarella, pepperoni, and Italian seasoning. Mix only until the pieces are coated without crushing the dough.
  4. Transfer the mixture to the prepared slow cooker and spread it into an even layer. Sprinkle the remaining 1 cup of mozzarella over the top.
  5. Cover and cook on LOW for 3 to 4 hours or on HIGH for approximately 2 hours. The pizza is ready when the biscuit pieces are cooked through and the center is no longer doughy.
  6. Turn off the slow cooker and let the pizza stand uncovered for 5 to 10 minutes. Scoop into bowls and serve warm.

Notes

Omit the meat for a vegetarian version. Add mushrooms, bell pepper, olives, onions, or cooked bacon, but avoid too many watery vegetables. Do not repeatedly lift the lid during cooking, and continue cooking if the center remains doughy even when the edges are browned.
