- Place the cold mashed potatoes in a mixing bowl. Add the egg, flour, cheddar cheese, green onions, garlic powder, salt, and black pepper, then mix just until evenly combined.
- Divide the mixture into 8 portions and shape each portion into a patty about 1/2 inch thick. If the mixture feels sticky or loose, refrigerate the shaped patties for 15-30 minutes before frying.
- Heat 2 tablespoons of oil in a large nonstick or cast-iron skillet over medium heat. Arrange the patties in batches with space between them.
- Cook the patties for 4-5 minutes per side, adding a little more oil as needed. Turn them only after the first side is well browned and releases easily from the pan.
- Transfer the cooked patties to a paper towel-lined plate or wire rack. Serve hot with sour cream, applesauce, or a dipping sauce.
Notes
Cold, moderately firm mashed potatoes work best. If the potatoes are very soft or wet, add 1-2 additional tablespoons of flour or breadcrumbs. Parmesan may replace some or all of the cheddar; use 1/4 cup finely grated Parmesan. Chopped parsley, chives, or 1/4 cup breadcrumbs can also be added.
