Easy Crispy Mashed Potato Patties

Cold leftover mashed potatoes are mixed with cheddar, green onion, egg, flour, and simple seasonings, then shallow-fried into eight crisp, golden patties. They are an easy way to give yesterday's potatoes a delicious second serving.

  • 2 cups Cold, prepared mashed potatoes
  • 1 Large egg
  • 1/4 cup All-purpose flour
  • 1/2 cup Shredded cheddar cheese
  • 2 Green onions, thinly sliced
Seasonings
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon, or to taste Salt
  • 1/4 teaspoon Black pepper
For Frying
  • 2-3 tablespoons Vegetable, canola, or olive oil

Method
 

Step-by-Step
  1. Place the cold mashed potatoes in a mixing bowl. Add the egg, flour, cheddar cheese, green onions, garlic powder, salt, and black pepper, then mix just until evenly combined.
  2. Divide the mixture into 8 portions and shape each portion into a patty about 1/2 inch thick. If the mixture feels sticky or loose, refrigerate the shaped patties for 15-30 minutes before frying.
  3. Heat 2 tablespoons of oil in a large nonstick or cast-iron skillet over medium heat. Arrange the patties in batches with space between them.
  4. Cook the patties for 4-5 minutes per side, adding a little more oil as needed. Turn them only after the first side is well browned and releases easily from the pan.
  5. Transfer the cooked patties to a paper towel-lined plate or wire rack. Serve hot with sour cream, applesauce, or a dipping sauce.

Notes

Cold, moderately firm mashed potatoes work best. If the potatoes are very soft or wet, add 1-2 additional tablespoons of flour or breadcrumbs. Parmesan may replace some or all of the cheddar; use 1/4 cup finely grated Parmesan. Chopped parsley, chives, or 1/4 cup breadcrumbs can also be added.
