  1. Heat the oven to 350°F (175°C). Lightly grease a 9-by-13-inch baking dish, or use an 8-by-8-inch dish if you prefer a thicker casserole.
  2. Drain the whole-kernel corn well, then add it to a large bowl with the corn muffin mix, cream-style corn, sour cream, and melted butter. Add the optional salt and black pepper if desired.
  3. Stir the mixture just until all the ingredients are evenly combined. Avoid overmixing, since a gentle stir helps preserve the casserole's soft, tender texture.
  4. Spread the mixture evenly in the prepared baking dish. Smooth the surface lightly so it cooks at an even rate.
  5. Bake uncovered for 40 to 50 minutes, until the center is mostly set and the top is lightly golden. If using a deeper 8-by-8-inch dish, the casserole may need closer to 50 to 60 minutes.
  6. Let the casserole rest for 5 to 10 minutes before serving. This short rest allows the creamy center to firm up while remaining soft and spoonable.

Notes

Drain the whole-kernel corn thoroughly to prevent a loose or gummy casserole. Judge doneness by the center rather than the browned edges; a slight soft jiggle is fine because the casserole continues to set as it rests. For variations, fold in 1 cup shredded cheddar cheese, add it during the final 10 minutes, or stir in 2 tablespoons chopped green chiles or a small amount of diced jalapeño.
