Easy Cream of Broccoli Soup Recipe

Soup Base
  • 4 tablespoons Unsalted butter, divided
  • 1 medium Medium yellow onion, diced
  • 1 stalk Celery stalk, diced
  • 2 cloves Garlic cloves, minced
  • 1/4 cup All-purpose flour
  • 4 cups Chicken or vegetable broth
Vegetables and Dairy
  • 4 cups Broccoli florets, chopped
  • 2 cups Whole milk
  • 1/2 cup Heavy cream
Seasoning
  • 1 teaspoon Kosher salt, plus more to taste
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Ground nutmeg, optional
Serving
  • 1/2 cup Shredded cheddar cheese, optional

Method
 

Step-by-Step
  1. Melt 2 tablespoons butter in a large pot over medium heat. Add the diced onion and celery and cook for 4–5 minutes, until softened, then add the garlic and cook for about 30 seconds.
  2. Add the remaining 2 tablespoons butter. Once melted, whisk in the flour and cook for 1–2 minutes to form a light roux.
  3. Gradually whisk in the broth to prevent lumps. Add the chopped broccoli, kosher salt, black pepper, and optional nutmeg.
  4. Bring the soup to a gentle boil, then reduce the heat. Cover the pot partially and simmer for 12–15 minutes, until the broccoli is very tender.
  5. Stir in the whole milk and heavy cream. Heat gently for 3–5 minutes, taking care not to boil the soup after adding the dairy.
  6. Blend part or all of the soup with an immersion blender, according to your preferred texture. Taste, adjust the seasoning, and serve with optional shredded cheddar.

Notes

Cook the roux briefly to remove the raw flour taste and help the soup become smooth. Add the milk and cream near the end and do not boil after adding dairy. Refrigerate leftovers in a covered container and reheat gently over low heat.
