Easy Cranberry Brie Bites

Flaky puff pastry cups are filled with melted Brie, whole-berry cranberry sauce, chopped pecans, and optional rosemary. These festive appetizer bites bake in 15–20 minutes and are best served warm.

  • 1 sheet, approximately 8 ounces Frozen puff pastry, thawed but still cold
  • 8 ounces Brie cheese, cut into 24 small cubes
  • 1/2 cup Whole-berry cranberry sauce
  • 1/4 cup Pecans, finely chopped
  • 1 teaspoon, optional Fresh rosemary, finely chopped
For the Pan
  • As needed Cooking spray or butter
Optional Egg Wash
  • 1 Large egg
  • 1 tablespoon Water

Method
 

Step-by-Step
  1. Heat the oven to 375°F (190°C), and lightly grease a 24-cup mini-muffin pan with cooking spray or butter.
  2. Unfold the thawed puff pastry while it is still cold, then cut it into 24 equal squares, usually about 2 inches each.
  3. Press one pastry square into each mini-muffin cup, leaving the corners extending slightly above the rim.
  4. Place one small Brie cube in each pastry cup, leaving the edible rind on unless you prefer to trim it.
  5. Top each Brie cube with about 1 teaspoon of whole-berry cranberry sauce, followed by a small pinch of chopped pecans and rosemary.
  6. If desired, whisk the egg with 1 tablespoon of water and lightly brush the exposed pastry edges with the egg wash.
  7. Bake for 15–20 minutes, until the puff pastry is golden brown and puffed and the Brie is melted.
  8. Cool the bites in the pan for about 5 minutes before removing them carefully, then serve warm.

Notes

Keep puff pastry cold while working for the best puff and easiest shaping. Use thick whole-berry cranberry sauce and avoid overfilling. Let the baked bites rest for about 5 minutes so the melted Brie can set slightly and the pastries release more cleanly.
