Chocolate Cottage Cheese Mousse
  • 1 cup Cottage cheese, preferably full-fat or 2%
  • 2 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Pure maple syrup or honey
  • 1/2 teaspoon Vanilla extract
  • 1 small pinch Salt
Optional Toppings
  • As desired Berries, sliced banana, chopped nuts, mini chocolate chips, or grated chocolate

Method
 

Step-by-Step
  1. Add the cottage cheese, unsweetened cocoa powder, maple syrup or honey, vanilla extract, and salt to a blender or food processor.
  2. Blend for 1 to 2 minutes, scraping down the sides once or twice, until the mixture is completely smooth and creamy.
  3. Taste the mixture and adjust the sweetness or cocoa level as needed.
  4. Spoon the blended dessert into two serving dishes.
  5. Serve immediately for a soft pudding texture, or refrigerate for about 30 minutes to firm it.
  6. Finish with berries, banana, nuts, mini chocolate chips, or grated chocolate before serving.

Notes

Blend longer than expected for the smoothest texture. Full-fat or 2% cottage cheese creates a richer mousse; if using low-fat cottage cheese, chilling is especially helpful because the dessert may be looser. Use small-curd cottage cheese when possible, and drain excess liquid if the mixture looks watery.
