- Heat the oven to 350°F. Drain and rinse the black beans thoroughly, and drain the corn very well so excess liquid does not make the dip watery.
- In a mixing bowl, beat the softened cream cheese with the sour cream and salsa until the mixture is mostly smooth.
- Stir in the beans, corn, 1/2 cup of the shredded Mexican-blend cheese or Monterey Jack, green onions, optional jalapeño, cumin, chili powder, salt, and optional cilantro.
- Transfer the mixture to an approximately 8 x 8-inch baking dish or a 1 1/2-quart casserole dish. Sprinkle the remaining shredded cheese and the cheddar over the top.
- Bake for 20–25 minutes, until the dip is hot and bubbling around the edges. For a more browned top, broil for 1–2 minutes at the end while watching closely.
- Let the dip rest for 5 minutes before serving. Offer tortilla chips, pita chips, or sliced vegetables alongside it.
Notes
Soften the cream cheese completely for a smooth mixture, and drain both canned ingredients well. The dip can be assembled up to one day ahead, covered, and refrigerated; bake for about 25–30 minutes when starting cold.
