Easy Corn and Black Bean Dip

A warm, creamy Tex-Mex dip filled with black beans, corn, salsa, jalapeño, and melted cheese. Bake until bubbly and serve with tortilla chips or fresh vegetables.

  • 1 15-ounce can Black beans, drained and rinsed
  • 1 15-ounce can Whole-kernel corn, drained
Creamy Base
  • 8 ounces Cream cheese, softened
  • 1/2 cup Sour cream
  • 1 cup Prepared salsa, preferably medium
Cheese and Seasonings
  • 1 cup Shredded Mexican-blend cheese or Monterey Jack
  • 1/2 cup Shredded cheddar cheese
  • 1/4 cup Sliced green onions
  • 1 small Small jalapeño, seeded and finely chopped
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Chili powder
  • 1/4 teaspoon Salt
Optional Finish
  • 2 tablespoons Chopped fresh cilantro

Method
 

Step-by-Step
  1. Heat the oven to 350°F. Drain and rinse the black beans thoroughly, and drain the corn very well so excess liquid does not make the dip watery.
  2. In a mixing bowl, beat the softened cream cheese with the sour cream and salsa until the mixture is mostly smooth.
  3. Stir in the beans, corn, 1/2 cup of the shredded Mexican-blend cheese or Monterey Jack, green onions, optional jalapeño, cumin, chili powder, salt, and optional cilantro.
  4. Transfer the mixture to an approximately 8 x 8-inch baking dish or a 1 1/2-quart casserole dish. Sprinkle the remaining shredded cheese and the cheddar over the top.
  5. Bake for 20–25 minutes, until the dip is hot and bubbling around the edges. For a more browned top, broil for 1–2 minutes at the end while watching closely.
  6. Let the dip rest for 5 minutes before serving. Offer tortilla chips, pita chips, or sliced vegetables alongside it.

Notes

Soften the cream cheese completely for a smooth mixture, and drain both canned ingredients well. The dip can be assembled up to one day ahead, covered, and refrigerated; bake for about 25–30 minutes when starting cold.
