- Whisk the instant chocolate pudding mix and cold milk in a medium bowl for about 2 minutes, until the mixture begins to thicken.
- Add the pumpkin purée, pumpkin-pie spice, and optional salt. If using unsweetened cocoa powder for a deeper chocolate flavor, add 1–2 tablespoons at this stage.
- Whisk or fold until the pudding is completely smooth and the pumpkin and spices are evenly blended throughout.
- Spoon the pudding into four small serving dishes, dividing it as evenly as possible.
- Cover the dishes and refrigerate for at least 30 minutes. Chill for 1 hour when you want a noticeably firmer, mousse-like texture.
- Serve cold with whipped cream and optional chocolate shavings or chopped toasted pecans.
Notes
Use instant chocolate pudding mix, not cook-and-serve pudding, because this no-cook method depends on instant setting. The pudding thickens and the pumpkin flavor becomes smoother as it chills. Keep covered and refrigerated until serving.
