Easy Chocolate Pumpkin Pudding Recipe

Easy Chocolate Pumpkin Pudding Recipe

A quick no-bake dessert made with instant chocolate pudding, pumpkin purée, cold milk, and pumpkin-pie spice. It makes four thick, mousse-like servings and needs only 5–10 minutes of preparation before chilling.
Prep Time 5 minutes
Total Time 40 minutes
Servings: 4 servings

Ingredients

Pudding
  • 15 ounces Plain pumpkin purée, not pumpkin pie filling
  • 3.9 ounces Instant chocolate pudding mix
  • 1 cup Cold whole or 2% milk
  • 1 teaspoon Pumpkin-pie spice
  • 1/4 teaspoon Salt
Optional Chocolate Variation
  • 1-2 tablespoons Unsweetened cocoa powder
For Serving
  • As needed Whipped cream, chocolate shavings, or chopped toasted pecans

Method

Step-by-Step
  1. Whisk the instant chocolate pudding mix and cold milk in a medium bowl for about 2 minutes, until the mixture begins to thicken.
  2. Add the pumpkin purée, pumpkin-pie spice, and optional salt. If using unsweetened cocoa powder for a deeper chocolate flavor, add 1–2 tablespoons at this stage.
  3. Whisk or fold until the pudding is completely smooth and the pumpkin and spices are evenly blended throughout.
  4. Spoon the pudding into four small serving dishes, dividing it as evenly as possible.
  5. Cover the dishes and refrigerate for at least 30 minutes. Chill for 1 hour when you want a noticeably firmer, mousse-like texture.
  6. Serve cold with whipped cream and optional chocolate shavings or chopped toasted pecans.

Notes

Use instant chocolate pudding mix, not cook-and-serve pudding, because this no-cook method depends on instant setting. The pudding thickens and the pumpkin flavor becomes smoother as it chills. Keep covered and refrigerated until serving.
