Easy Chickpea Tuna Salad Recipe (Vegan & Healthy)

A creamy, crunchy vegan chickpea salad with classic tuna-salad flavors from Dijon mustard, lemon, pickles, celery, and dill. Serve it as a sandwich filling, wrap filling, salad topper, or quick snack with crackers.

  • 2 15-ounce cans Chickpeas, drained and rinsed
Creamy Dressing
  • 1/3 cup Vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Fresh lemon juice
Crunch and Flavor
  • 1/4 cup Red onion, finely diced
  • 1/4 cup Celery, finely diced
  • 1/4 cup Dill pickles or pickle relish, finely chopped
Optional Seasonings
  • 1 tablespoon Capers, chopped
  • 1 sheet Nori, finely crumbled
  • 1 tablespoon Fresh dill, chopped
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Drain and rinse the chickpeas well, then pat them dry if they are especially wet. Place them in a mixing bowl and roughly mash with a fork or potato masher, leaving some chickpeas partly intact.
  2. Add the vegan mayonnaise, Dijon mustard, lemon juice, red onion, celery, pickles, capers, nori, dill, garlic powder, salt, and black pepper. Stir until the ingredients are evenly combined.
  3. Taste the salad and adjust the salt, lemon juice, mustard, or mayonnaise as desired. Serve immediately, or refrigerate for 20–30 minutes so the flavors can develop.

Notes

Keep the mixture slightly chunky rather than puréeing it. Store covered in the refrigerator and use within 3–4 days for the best texture and flavor. For a less rich version, some vegan mayonnaise can be replaced with hummus.
