  • 1 cup All-purpose flour
  • 3/4 cup Packed light brown sugar
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, melted
  • 1/2 cup Honey
  • 1 teaspoon Vanilla extract
  • 1 cup Semisweet chocolate chips, preferably mini

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9 x 13-inch baking pan or line it with parchment paper, leaving enough overhang to lift out the cooled bars.
  2. In a large bowl, stir together the quick-cooking oats, flour, packed light brown sugar, baking soda, and salt until evenly combined.
  3. Add the melted unsalted butter, honey, and vanilla extract. Stir until every bit of the dry mixture looks evenly moistened.
  4. Fold in the semisweet chocolate chips. If using regular-size chips instead of mini chips, allow the mixture to cool slightly first so the chocolate does not melt too much.
  5. Transfer the mixture to the prepared pan. Press it down very firmly and evenly with the back of a spoon or a flat-bottomed measuring cup.
  6. Bake at 350°F (175°C) for 12 to 15 minutes, until the edges are lightly browned and the center still looks soft.
  7. Cool completely in the pan for at least 30 minutes. Lift the slab out using the parchment, chill briefly if desired for cleaner cuts, and slice into about 24 bars.

Notes

Firmly compact the mixture before baking so the bars hold together. Do not overbake; lightly browned edges and a soft center produce the best chewy texture. Store cooled bars in an airtight container.
