Easy Cherry Marshmallow Balls

A no-bake confection made with maraschino cherries, miniature marshmallows, sweetened condensed milk, coconut, and graham cracker or vanilla wafer crumbs. The finished balls are chilled until firm and coated in sweet flaked coconut.

Cherry Marshmallow Ball Mixture
  • 1 10-ounce jar (283 g) Maraschino cherries, very well drained and finely chopped
  • 1 14-ounce can (396 g) Sweetened condensed milk
  • 1 10-ounce package (283 g) Miniature marshmallows
  • 2 cups (about 170 g) Sweetened flaked coconut
  • 1 cup (about 100 g) Finely crushed graham crackers or vanilla wafer crumbs
  • 1 teaspoon Vanilla extract
Coating
  • 1 cup (about 85 g) Additional sweetened flaked coconut

Method
 

Step-by-Step
  1. Drain the maraschino cherries exceptionally well, pat them dry with paper towels, and chop them finely. Add the cherries, miniature marshmallows, 2 cups coconut, crumbs, sweetened condensed milk, and vanilla to a large bowl, then stir until evenly combined.
  2. Cover the bowl and refrigerate the mixture for 1–2 hours, or until it is firm enough to shape. Scoop about 1 tablespoon of the chilled mixture at a time and roll it into a ball with lightly buttered or dampened hands.
  3. Roll each ball in the additional coconut, gently pressing the coating into the surface. Refrigerate the finished balls until firm, then store them covered in the refrigerator.

Notes

Drying the cherries thoroughly is essential because excess syrup can make the mixture loose and keep the balls from setting properly. Chill the mixture before shaping and chill the finished balls again before serving.
