Easy Cheesy Stuffing Casserole

A comforting chicken casserole made with boxed herb stuffing, condensed cream of chicken soup, sour cream, vegetables, and cheddar cheese. It is an easy dinner that serves 6–8 people.

  • 1 6-ounce package Dry herb-seasoned stuffing mix
  • 3 cups Cooked chicken, shredded or chopped
  • 1 10.5-ounce can Condensed cream of chicken soup
  • 1/2 cup Sour cream
  • 1 1/2 cups Chicken broth or stock
  • 1/2 cup Unsalted butter, divided
  • 1 small Small onion, finely chopped
  • 2 stalks Celery stalks, finely chopped
  • 1 1/2 cups Shredded cheddar cheese, divided
Seasonings
  • 1/2 teaspoon Poultry seasoning, optional
  • 1/4 teaspoon Black pepper
  • as needed Salt, only if needed

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
  2. Melt 4 tablespoons of the butter in a skillet. Sauté the onion and celery for 5–7 minutes, until softened.
  3. Add the remaining 4 tablespoons butter and chicken broth. Heat until the butter melts, but do not bring the mixture to a boil.
  4. Place the stuffing mix in a large bowl. Pour in the broth mixture, toss gently, and let it stand for about 5 minutes.
  5. Stir together the condensed soup, sour cream, black pepper, and optional poultry seasoning. Fold this mixture and the cooked chicken into the stuffing.
  6. Stir in 1 cup of the shredded cheddar cheese.
  7. Spread the mixture in the prepared baking dish and sprinkle the remaining 1/2 cup cheddar over the top.
  8. Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10–15 minutes, until hot throughout and the cheese is melted and lightly browned.
  9. Let the casserole rest for 5 minutes before serving.

Notes

Do not overmix or oversoak the stuffing. Covering the casserole during the first part of baking helps prevent dryness, while uncovering it at the end browns the cheese. Cooked turkey may replace some or all of the chicken, and cream of mushroom soup, frozen peas, mixed vegetables, sautéed mushrooms, Monterey Jack, or a cheddar-Jack blend may be used as variations.
