- Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
- In a large bowl, stir together the condensed cream of chicken soup, sour cream, melted butter, chopped onion, salt, pepper, and 1 1/2 cups of the shredded cheddar cheese.
- Fold in the thawed hash-brown potatoes until every piece is evenly coated with the creamy cheese mixture.
- Spread the potato mixture in the prepared baking dish. Sprinkle the remaining 1/2 cup cheddar over the top, and add the buttered cornflake topping if using.
- Cover the dish loosely with foil and bake for about 30 minutes.
- Remove the foil and continue baking for 15–25 minutes, until the casserole is hot throughout, bubbling at the edges, and lightly browned on top.
- Let the casserole stand for 5 minutes before serving so the creamy filling can settle slightly.
Notes
Thaw and drain the potatoes before mixing to prevent a loose casserole. For a particularly crisp topping, leave the dish uncovered during the final 15–20 minutes and add the cornflakes at that stage. Cream of mushroom soup or Monterey Jack, Colby, or cheddar-Jack cheese may be substituted.
