Easy Cheesy Potato Casserole

Creamy frozen hash-brown potatoes are combined with sour cream, cream of chicken soup, butter, onion, and sharp cheddar, then baked until bubbling and golden. An optional buttered cornflake topping adds extra crunch.

  • 1 package (30-32 ounces) Frozen shredded or diced hash-brown potatoes, thawed
  • 1 can (10.5 ounces) Condensed cream of chicken soup
  • 1 container (8 ounces) Sour cream
  • 2 cups, divided Shredded sharp cheddar cheese
  • 1/2 cup Butter, melted
  • 1/2 cup Finely chopped yellow onion
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Optional Topping
  • 1 cup Lightly crushed cornflakes
  • 2 tablespoons Melted butter for cornflakes

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
  2. In a large bowl, stir together the condensed cream of chicken soup, sour cream, melted butter, chopped onion, salt, pepper, and 1 1/2 cups of the shredded cheddar cheese.
  3. Fold in the thawed hash-brown potatoes until every piece is evenly coated with the creamy cheese mixture.
  4. Spread the potato mixture in the prepared baking dish. Sprinkle the remaining 1/2 cup cheddar over the top, and add the buttered cornflake topping if using.
  5. Cover the dish loosely with foil and bake for about 30 minutes.
  6. Remove the foil and continue baking for 15–25 minutes, until the casserole is hot throughout, bubbling at the edges, and lightly browned on top.
  7. Let the casserole stand for 5 minutes before serving so the creamy filling can settle slightly.

Notes

Thaw and drain the potatoes before mixing to prevent a loose casserole. For a particularly crisp topping, leave the dish uncovered during the final 15–20 minutes and add the cornflakes at that stage. Cream of mushroom soup or Monterey Jack, Colby, or cheddar-Jack cheese may be substituted.
