- Crack the eggs into a bowl. Add the milk or water, salt, and black pepper, then beat until the yolks and whites are fully combined.
- Place a small nonstick skillet over medium-low to medium heat. Add the butter and tilt the skillet so the melted butter coats the cooking surface.
- Pour in the beaten eggs and let them sit for about 20–30 seconds. Gently push the set edges toward the center while tilting the skillet so uncooked egg flows underneath.
- When the top is mostly set but still slightly moist, sprinkle the shredded cheddar over one half of the omelet.
- Fold the omelet in half and cook for another 30–60 seconds, just until the cheese melts.
- Slide the omelet onto a plate and garnish with chopped chives or parsley, if desired. Serve immediately.
Notes
Use a small nonstick skillet and medium-low heat for a soft omelet. Remove it while the top is still slightly glossy because residual heat will finish cooking the eggs.
