- Wash the strawberries and dry them thoroughly. Slice off the leafy tops, then carefully hollow out the center of each berry with a small paring knife or melon baller, taking care not to cut through the bottom.
- Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Scrape down the bowl once or twice so the filling is evenly mixed.
- Transfer the cheesecake filling to a piping bag or a zip-top bag with one corner snipped off. Pipe the mixture into each hollowed strawberry until the filling reaches the top.
- Dip or sprinkle the filled tops with graham-cracker crumbs. Add melted chocolate, extra crumbs, or lemon zest if desired.
- Serve the strawberries immediately, or refrigerate them for 20 to 30 minutes until firm and chilled. Keep them cold until serving for the best texture.
Notes
Dry the strawberries very well after washing so excess moisture does not soften the berries or make the filling slide out. Fully softened cream cheese mixes more smoothly, and piping produces a cleaner presentation than spooning in the filling.
