Servings: 4 servings

Ingredients

For the Salad
  • 1 lb (450 g) Ground beef, preferably 80–90% lean
  • 1/2 tsp Fine salt
  • 1/4 tsp Black pepper
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 8 cups Chopped romaine or iceberg lettuce
  • 1 cup Cherry tomatoes, halved, or 1 medium tomato, diced
  • 1/2 cup Dill pickles, chopped
  • 1/4 cup Red onion, finely diced
  • 1/2 cup Shredded cheddar cheese
For the Cheeseburger Dressing
  • 1/2 cup Mayonnaise
  • 1/4 cup Unsweetened ketchup or sugar-free ketchup
  • 2 Tbsp Yellow mustard
  • 1–2 Tbsp Dill-pickle juice
  • 1/4 or a pinch tsp Garlic powder or smoked paprika, optional

Method

Step-by-Step
  1. Whisk the mayonnaise, ketchup, yellow mustard, and 1 tablespoon of dill-pickle juice in a small bowl. Add the optional garlic powder or smoked paprika, then add the remaining pickle juice if you want a thinner, tangier dressing.
  2. Heat a large skillet over medium-high heat. Add the ground beef, break it into small crumbles, and let it brown undisturbed for a minute or two before stirring.
  3. Season the beef with salt, black pepper, garlic powder, and onion powder. Cook for about 7–10 minutes, stirring frequently, until browned and no longer pink; drain excess fat if necessary.
  4. While the beef cooks, chop the lettuce, tomatoes, pickles, and red onion. Divide the lettuce among four bowls.
  5. Top each bowl with the cooked beef, tomatoes, pickles, red onion, and shredded cheddar. Add the cheese while the beef is still hot if you prefer a softer, slightly melted topping.
  6. Drizzle with the cheeseburger dressing just before serving, or place the dressing on the side. Serve while the beef is warm and the lettuce is crisp.

Notes

Keep the dressing and warm beef separate until serving so the lettuce stays crisp. For a stricter low-carb or keto version, choose sugar-free ketchup and check the carbohydrate content of the pickles and dressing ingredients.
