Ingredients

Main Ingredients
  • 1 pound Lean ground beef
  • 1/2 medium Yellow onion, finely diced
  • 1 clove Garlic, minced
  • 8 ounces Cream cheese, softened and cut into cubes
  • 1/2 cup Sour cream
  • 1/2 cup Ketchup
  • 2 tablespoons Yellow mustard
  • 1 1/2 cups Sharp cheddar cheese, shredded and divided
Seasonings
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Optional Add-Ins and Garnishes
  • 1/4 cup Finely chopped dill pickles
  • As desired Chopped pickles, green onion, or diced tomato for garnish

Method

Step-by-Step
  1. Heat the oven to 375°F. Brown the ground beef and diced onion in a skillet over medium heat for about 6–8 minutes, breaking the beef into small pieces until no pink remains.
  2. Add the minced garlic and cook for 30–60 seconds, just until fragrant. Drain the excess fat carefully so the finished dip stays creamy instead of oily.
  3. Reduce the heat to low and stir in the softened cream cheese, sour cream, ketchup, mustard, kosher salt, black pepper, and 1 cup of shredded cheddar. Continue mixing until smooth and creamy.
  4. Stir in the finely chopped dill pickles if using. Transfer the mixture to an approximately 8 x 8-inch baking dish and spread it into an even layer.
  5. Sprinkle the remaining 1/2 cup of shredded cheddar over the top. Bake for 15–20 minutes, until hot, bubbling, and lightly browned.
  6. Garnish with chopped pickles, green onion, or diced tomato as desired. Serve immediately with tortilla chips, crackers, toasted baguette slices, or vegetables.

Notes

Soften the cream cheese before mixing to prevent lumps. Drain the beef well before adding dairy ingredients. For a slow-cooker version, brown and drain the beef first, combine all ingredients, and heat on LOW for about 1–2 hours, stirring occasionally.
