Ingredients
  

Carrot Souffle
  • 2 pounds Carrots, peeled and sliced
  • 1/2 cup Unsalted butter, melted or softened
  • 1 cup Granulated sugar
  • 3 Large eggs
  • 1 teaspoon Vanilla extract
  • 1/4 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Table salt
Garnish
  • As needed Powdered sugar, optional

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 1 1/2- to 2-quart baking dish or souffle dish.
  2. Boil or steam the sliced carrots for 15–20 minutes, until extremely tender. Drain them thoroughly so excess water does not thin the souffle.
  3. Purée the hot carrots in a food processor or blender until smooth. Add the butter, sugar, eggs, vanilla, flour, baking powder, and salt, then blend just until evenly combined.
  4. Pour the carrot mixture into the prepared baking dish. Bake uncovered at 350°F for 40–45 minutes, until the center is set and the top is lightly browned.
  5. Rest the souffle for 5–10 minutes before serving. Dust with powdered sugar if desired and serve warm.

Notes

Cook the carrots until completely tender and drain them well. Do not overbake; the center should be just set and will firm slightly as it cools. Refrigerate leftovers in a covered container and reheat gently.
