Easy Caramel Apple Pie Quesadillas

Crisp flour tortillas are filled with tender cinnamon apples and finished with warm caramel sauce for a quick apple pie-inspired dessert. This recipe makes four dessert quesadillas in about 20–25 minutes.

Ingredients
  

Apple Filling
  • 2 medium apples, about 3 cups Medium tart apples, such as Granny Smith, peeled, cored, and diced small
  • 2 tablespoons Unsalted butter
  • 1/4 cup Packed light brown sugar
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon, optional Ground nutmeg
Quesadillas
  • 4 tortillas 8-inch flour tortillas
Toppings
  • 1/2 cup Prepared caramel ice-cream topping or caramel sauce
  • 1 tablespoon, optional Granulated sugar
  • 1/4 teaspoon, optional Additional ground cinnamon
  • As desired Vanilla ice cream or whipped cream

Method
 

Step-by-Step
  1. Melt the butter in a large skillet over medium heat. Add the diced apples, brown sugar, cinnamon, and optional nutmeg, then cook for 4–6 minutes, stirring occasionally, until the apples are tender but not mushy and the liquid has thickened slightly.
  2. Place one tortilla in a clean skillet or on a work surface. Spoon one-quarter of the apple mixture over half of the tortilla, leaving a small border, then fold the tortilla over the filling.
  3. Cook the folded quesadilla in a lightly buttered or dry nonstick skillet over medium-low heat for about 2–3 minutes per side, until golden brown and crisp. Repeat with the remaining tortillas and apple filling.
  4. Cut the quesadillas into wedges. Drizzle with warm caramel sauce and finish with optional cinnamon sugar, vanilla ice cream, or whipped cream before serving.

Notes

Cook the apples only until just tender so the filling does not become watery. Medium-low heat helps the tortillas brown without scorching the caramel or sugar. For a canned filling shortcut, use about 1 1/2 cups canned apple pie filling, drain excess syrup, and omit the butter, brown sugar, and most of the apple cooking time.
