Ingredients

Sugar Cookies
  • 1 cup (226 g) Unsalted butter, softened
  • 1 1/2 cups (300 g) Granulated sugar
  • 1 large Large egg
  • 2 teaspoons Vanilla extract
  • 4 cups (500 g) All-purpose flour, plus extra for rolling
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
Royal Icing
  • 4 cups (about 480 g) Sifted powdered sugar
  • 3 tablespoons Meringue powder
  • 5-6 tablespoons Water
  • as needed Red gel food coloring
  • as needed Royal-blue gel food coloring
  • as needed White icing or uncolored royal icing
Optional Decoration
  • as needed White star sprinkles or small white candy stars

Method

Step-by-Step
  1. Whisk the flour, baking powder, and salt together in a medium bowl. In a separate large bowl, beat the softened butter and sugar for 2-3 minutes, until light and fluffy.
  2. Beat the egg and vanilla into the butter mixture until combined. Add the dry ingredients gradually, mixing only until a soft dough forms.
  3. Divide the dough into two portions, flatten each portion into a disk, wrap, and refrigerate for about 1 hour. Chilling makes the dough easier for children to roll and helps the cookies hold their round shape.
  4. Heat the oven to 350°F (175°C) and line baking sheets with parchment paper. Roll one dough disk on a lightly floured surface to approximately 1/4 inch thick.
  5. Cut round cookies with a cookie cutter and transfer them to the prepared baking sheets. If the dough feels soft, chill the cut cookies for another 10-15 minutes before baking.
  6. Bake each tray for 8-11 minutes, removing the cookies when the centers look set and the edges are only lightly colored. Cool the cookies completely on the baking sheets or a wire rack before decorating.
  7. For the royal icing, beat the sifted powdered sugar, meringue powder, and 5-6 tablespoons of water until smooth and thick. Add a little more water only as needed to create a consistency suitable for outlining or flooding.
  8. Divide the icing into red, royal-blue, and white portions, then tint the first two portions with gel food coloring. Spoon the icing into piping bags or small decorating bags.
  9. Pipe or spread a blue outer area, followed by white and red concentric rings, leaving a small white center. Finish with a white star in the middle, or let children add a white star sprinkle while the icing is still wet.
  10. Allow each color to dry briefly before adding the next ring so the red, white, and blue colors stay defined. Let the finished cookies set completely before stacking or serving.

Notes

For a shortcut, use 24 purchased round sugar cookies or refrigerated sugar-cookie dough baked according to package directions. Decorate with approximately 1 cup each of red, white, and blue ready-made icing. Store fully set cookies in an airtight container at room temperature.
