  • 1/2 cup Low-sodium vegetable or chicken broth, or water
  • 1/2 teaspoon Kosher salt, plus more to taste
  • 1/4 teaspoon Freshly ground black pepper
  • 1 tablespoon Fresh lime juice
  • 2 tablespoons Fresh cilantro, chopped, optional

Step-by-Step
  1. Drain and rinse the black beans. For a slightly saucier result, reserve 1/4 cup of the canning liquid or plan to add a little extra broth during simmering.
  2. Heat the olive oil in a skillet or saucepan over medium heat. Add the chopped onion and cook for 3 to 5 minutes, stirring occasionally, until softened.
  3. Add the minced garlic, cumin, oregano, and optional chili powder. Stir for about 30 seconds, just until the garlic and spices become fragrant.
  4. Add the black beans, broth or water, kosher salt, and black pepper. Stir carefully so the beans remain mostly whole.
  5. Bring the mixture to a gentle simmer and cook uncovered for 8 to 12 minutes, stirring occasionally. Lightly mash some of the beans if you prefer a thicker, creamier texture.
  6. Remove the pan from the heat and stir in the lime juice. Taste and adjust the salt, then garnish with chopped cilantro if using.

Notes

Blooming the spices with the aromatics adds depth. Keep the beans at a gentle simmer rather than a vigorous boil so they stay intact. Refrigerate leftovers in a covered container and reheat gently with a splash of broth or water.
