Easy Cake Mix Candy Corn Cookies

Soft, colorful candy corn cookies made with yellow cake mix, eggs, oil, and white chocolate chips. They are ready in about 20–25 minutes, excluding cooling time, and make approximately 24 cookies.

Ingredients
  

Cookie Dough
  • 1 15.25-ounce box (432 g) Yellow cake mix
  • 2 Large eggs
  • 1/3 cup (80 ml) Neutral vegetable oil, such as canola oil
Mix-Ins
  • 1 cup (about 170 g) Candy corn
  • 1/2 cup (about 85 g), optional White chocolate chips

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, stir together the yellow cake mix, eggs, and vegetable oil until a thick dough forms.
  3. Carefully fold in the white chocolate chips and candy corn. Reserve a few candy corn pieces for placing on top after baking, if desired.
  4. Scoop rounded tablespoons of dough, approximately 1 1/2 tablespoons each, onto the prepared baking sheets. Leave about 2 inches between portions.
  5. Bake for 8–12 minutes, until the edges are set and the centers still look slightly soft. Do not wait for the cookies to become deeply browned.
  6. Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to finish cooling.

Notes

Use parchment paper or a silicone mat because candy corn can melt, caramelize, and become sticky on an unlined pan. Remove the cookies while the centers are still soft because they firm up as they cool. For a cleaner appearance, press reserved candy corn and white chocolate chips onto the warm tops immediately after baking.
