- Heat the oven to 350°F (175°C). Grease a 9 x 13-inch baking pan or line it with parchment paper, leaving a little overhang to help lift out the cooled bars.
- In a large bowl, combine the yellow cake mix, egg, and vegetable or canola oil. Gradually add the milk, stirring until a very thick, sticky batter forms; it will not look like pourable cake batter.
- Fold in the white chocolate chips and colorful sprinkles until they are distributed throughout the dense dough. Use a gentle hand so the sprinkles keep their color.
- Press or spread the batter evenly into the prepared pan. A lightly greased spatula or a piece of parchment placed over the dough makes this sticky step much easier.
- Bake for 20–25 minutes, until the edges are lightly golden and the center looks set. Do not wait for the center to become deeply browned, because the bars continue to firm as they cool.
- Cool the pan for at least 20–30 minutes before slicing. Cut into approximately 16–24 bars, depending on whether you prefer generous squares or smaller party-size pieces.
Notes
For the best chewy texture, remove the pan when the center is just set and avoid overbaking. Parchment helps with pressing, lifting, and slicing. White chocolate chips keep the vanilla cake-batter flavor at the forefront.
