  • 1 tablespoon Olive oil
  • 1 pound Smoked sausage or kielbasa, sliced into rounds
  • 1 Medium onion, diced
  • 3 Garlic cloves, minced
  • 4 cups Beef broth
  • 4 cups Chicken broth
  • 1 14 to 15-ounce can Diced tomatoes with juices
  • 1 teaspoon Italian seasoning
  • 1/2 medium head, about 4 cups Medium green cabbage, chopped
  • 3 Medium carrots, sliced
  • 2 Celery stalks, sliced

  • To taste Salt and freshly ground black pepper

Method
 

Step-by-Step
  1. Heat the olive oil in a large soup pot or Dutch oven over medium-high heat. Add the sliced sausage and cook until lightly browned.
  2. Add the diced onion and minced garlic to the pot. Cook for about 3 to 5 minutes, stirring occasionally, until the onion softens.
  3. Pour in the beef broth, chicken broth, and diced tomatoes with their juices. Stir in the Italian seasoning.
  4. Add the chopped cabbage, sliced carrots, and sliced celery. Stir so the vegetables are distributed throughout the broth.
  5. Bring the soup to a boil, then reduce the heat. Simmer uncovered for approximately 15 to 20 minutes, until the cabbage and carrots are tender.
  6. Taste the soup after simmering and season with salt and freshly ground black pepper. Serve hot.

Notes

Brown the sausage before adding the broth for deeper flavor and lightly crisp edges. Add salt only after simmering because smoked sausage, canned tomatoes, and prepared broth may already contain substantial salt. Simmer only until the vegetables are tender so the cabbage does not become mushy.
