Easy Buttery Dill Carrots

Tender carrots are simmered until just cooked, then coated in melted butter, fresh dill, salt, and black pepper. This simple four-serving side dish is ready in about 15 to 20 minutes.

  • 1 pound Fresh carrots or baby carrots
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Fresh dill, chopped
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Ground black pepper
  • 2-3 tablespoons Water
Optional Substitution
  • 1 teaspoon Dried dill weed

Method
 

Step-by-Step
  1. Peel and trim the carrots. Cut larger carrots into evenly sized sticks or coins, while baby carrots may be left whole.
  2. Place the carrots and 2 to 3 tablespoons of water in a saucepan. Cover the pan and bring the water to a boil.
  3. Reduce the heat and simmer for 8 to 10 minutes, checking near the end of cooking. The carrots should be tender when pierced but should still hold their shape.
  4. Drain the carrots well, then return them to the warm saucepan. Add the butter, chopped fresh dill, salt, and black pepper.
  5. Toss gently until the butter melts and coats every carrot. Serve immediately while warm.

Notes

Cut carrots uniformly so they cook at the same rate. Add fresh dill after cooking for the brightest flavor. If using dried dill, add it with the butter so it has time to rehydrate. Avoid overcooking, since carrots can become watery and fall apart.
