Ingredients
  

Buffalo Chicken
  • 1 1/2 pounds Boneless, skinless chicken breasts or thighs
  • 1 cup Buffalo wing sauce, such as Frank’s RedHot Buffalo
  • 2 tablespoons Unsalted butter, melted
  • as needed Salt and black pepper
Sandwiches
  • 4 rolls Hoagie or sub rolls
  • 4 slices Provolone or mozzarella cheese
  • 1/2 cup Ranch dressing, plus more for serving
Optional Toppings
  • 1/4 cup Crumbled blue cheese
  • 1 cup Shredded lettuce
  • 1/2 cup Thinly sliced celery
  • 1/4 cup Thinly sliced red onion

  • 1 tablespoon Nonstick cooking spray or cooking oil

Method
 

Step-by-Step
  1. Season the chicken lightly with salt and black pepper. Cook it in a skillet over medium heat with the oil for about 6–8 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C).
  2. Let the cooked chicken rest for 5 minutes, then shred or thinly slice it. Stir the buffalo sauce and melted butter together, toss the warm chicken with about 3/4 cup of the sauce, and reserve the rest.
  3. Slice the hoagie rolls without cutting completely through them. Fill each roll with buffalo chicken and top with one slice of provolone or mozzarella.
  4. Toast the assembled subs at 400°F for 3–5 minutes, or until the cheese melts and the rolls are lightly crisp. Finish with ranch, blue cheese, lettuce, celery, and red onion as desired, then serve immediately.

Notes

Reserve some buffalo sauce for serving so the sandwiches do not become soggy. For a shortcut, use about 3 cups of shredded rotisserie chicken and warm it with the buffalo sauce and butter for 3–5 minutes before assembling. Blue cheese dressing can replace ranch for a sharper, more traditional pairing.
