- Add the shredded chicken and buffalo sauce to a skillet over medium heat. Stir frequently and cook for 3–5 minutes, until the chicken is hot and evenly coated.
- Warm the tortillas briefly in a microwave or dry skillet until flexible. This makes them easier to fill and roll without splitting.
- Spread about 1 tablespoon of ranch dressing down the center of each tortilla. Divide the buffalo chicken evenly among the tortillas, then add the cheese, lettuce, tomatoes, and green onions.
- Fold the sides of each tortilla inward over the filling. Roll tightly from the bottom to form a burrito, keeping the filling tucked inside as you go.
- Lightly coat a skillet with nonstick spray or 1 teaspoon neutral oil and place the burritos seam-side down over medium heat. Toast for 2–3 minutes per side, until lightly golden and the cheese has melted.
- Serve the burritos hot with extra ranch dressing or buffalo sauce. Slice them in half if desired, and add a little more green onion before serving.
Notes
Use relatively dry fillings to prevent soggy tortillas. Monterey Jack or Mexican-blend cheese melts smoothly, while blue cheese dressing and crumbled blue cheese offer a classic buffalo-style variation. Refrigerate leftovers promptly and reheat in a skillet or oven for the best texture.
