- Combine the halved tomatoes, minced garlic, fresh basil, balsamic vinegar, and diced red onion if using. Let the mixture stand for 10 to 15 minutes so the flavors can develop.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook for approximately 4 to 6 minutes per side, depending on thickness, until browned and the internal temperature reaches 145°F (63°C).
- Transfer the cooked pork chops to a plate and let them rest for 3 minutes. Spoon the tomato bruschetta mixture over the chops, then finish with balsamic glaze and Parmesan if desired.
Notes
Use an instant-read thermometer and remove the pork at 145°F (63°C) to help keep it juicy. For less watery bruschetta, seed large tomatoes or drain excess liquid before topping the chops.
