Pork Chops
  • 4 chops Boneless pork loin chops, about 6 ounces each and 3/4 to 1 inch thick
  • 1 tablespoon Olive oil, plus more if needed
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Bruschetta Topping
  • 2 cups Cherry or grape tomatoes, halved
  • 2 cloves Garlic cloves, finely minced
  • 1/4 cup Fresh basil, thinly sliced or chopped
  • 1 tablespoon Balsamic vinegar
  • 1/4 cup Red onion, finely diced, optional
Finishing Touches
  • 2 tablespoons Balsamic glaze, optional
  • 1/4 cup Shredded or grated Parmesan, optional

Method
 

Step-by-Step
  1. Pat the pork chops dry with paper towels, then season both sides evenly with the kosher salt and black pepper.
  2. Combine the halved tomatoes, minced garlic, fresh basil, balsamic vinegar, and diced red onion if using. Let the mixture stand for 10 to 15 minutes so the flavors can develop.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook for approximately 4 to 6 minutes per side, depending on thickness, until browned and the internal temperature reaches 145°F (63°C).
  4. Transfer the cooked pork chops to a plate and let them rest for 3 minutes. Spoon the tomato bruschetta mixture over the chops, then finish with balsamic glaze and Parmesan if desired.

Notes

Use an instant-read thermometer and remove the pork at 145°F (63°C) to help keep it juicy. For less watery bruschetta, seed large tomatoes or drain excess liquid before topping the chops.
