Ingredients
  

Bread and Garlic Oil
  • 1 loaf French bread, about 1 pound, halved lengthwise
  • 1/4 cup Olive oil
  • 2 cloves Garlic, minced
Tomato Topping
  • 4 tomatoes Plum tomatoes, seeded and chopped
  • 1/2 cup Fresh basil, chopped
  • 1/4 cup Grated Parmesan cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Cheese Topping
  • 2 cups Shredded part-skim mozzarella cheese

Method
 

Step-by-Step
  1. Preheat the oven to 400°F. Place the French bread halves cut-side up on an ungreased baking sheet.
  2. Mix the olive oil and minced garlic together, then brush the mixture over the cut surfaces of the bread.
  3. Bake the bread for about 5 minutes, just until lightly toasted.
  4. Meanwhile, combine the seeded chopped tomatoes, basil, Parmesan, salt, and black pepper in a bowl.
  5. Spoon the tomato mixture over the toasted bread and sprinkle the shredded mozzarella evenly over the top.
  6. Return the bread to the oven and bake for another 5 to 7 minutes, until the mozzarella is melted and lightly browned.
  7. Cut the melts into slices and serve warm.

Notes

Seed the tomatoes carefully to remove excess juice and help prevent soggy bread. Plum or Roma tomatoes are preferred, but ripe standard tomatoes may be substituted. Store leftovers covered in the refrigerator and reheat in the oven or toaster oven for the best texture.
