Ingredients

Casserole
  • 1 1/2 cups Cooked chicken, chopped or shredded
  • 3 cups Broccoli florets, lightly steamed or thawed if frozen
  • 1 10.5-ounce can Condensed cream of chicken soup
  • 1/2 cup Sour cream
  • 1/2 cup Milk
  • 1/2 teaspoon Garlic powder
  • 1 cup Shredded cheddar cheese, divided
  • 1/2 cup Grated Parmesan cheese
Topping
  • 1/2 cup Seasoned breadcrumbs
  • 2 tablespoons Butter, melted

Method

Step-by-Step
  1. Heat the oven to 350°F (175°C) and lightly grease a 9-by-13-inch baking dish.
  2. Steam fresh broccoli until just tender, about 3 to 4 minutes, then drain it well. If using frozen broccoli, thaw it completely and pat it dry.
  3. In a large bowl, whisk together the condensed cream of chicken soup, sour cream, milk, and garlic powder until smooth.
  4. Fold the cooked chicken, broccoli, 1/2 cup cheddar, and Parmesan into the sauce mixture until the ingredients are evenly coated.
  5. Spread the mixture evenly in the prepared baking dish, then sprinkle the remaining 1/2 cup cheddar over the surface.
  6. Combine the seasoned breadcrumbs with the melted butter and scatter the mixture over the cheese.
  7. Bake uncovered for about 25 to 30 minutes, until hot, bubbling, and lightly browned. Let the casserole stand for 5 minutes before serving.

Notes

Drain broccoli thoroughly so the sauce stays creamy rather than watery. Rotisserie chicken works well, and cream of mushroom soup, cooked rice, or Monterey Jack can be used as variations.
