- Heat the oven to 350°F and lightly grease a 9 x 13-inch baking dish.
- Cook the breakfast sausage in a skillet over medium heat, breaking it into small crumbles. Add the diced onion if using, cook until the sausage is browned and no longer pink, then drain excess grease.
- Spread the cooked sausage evenly across the bottom of the prepared baking dish. Sprinkle 1 cup of shredded cheddar over the sausage.
- Whisk the eggs, milk, kosher salt, black pepper, and garlic powder if using in a bowl until well combined. Pour the egg mixture evenly over the sausage and cheese.
- Arrange the frozen tater tots in a single layer over the casserole. Sprinkle the remaining 1 cup of cheddar over the top, or save it for the final part of baking.
- Bake the casserole uncovered for 45 to 55 minutes, until the eggs are set in the center, the internal temperature reaches at least 160°F, and the tater tots are crisp and golden.
- Let the casserole rest for 5 to 10 minutes before cutting. Serve warm with your favorite breakfast sides.

Keep the tater tots frozen before assembling so they hold their shape and crisp properly. For an overnight casserole, cover and refrigerate for up to overnight, let it sit at room temperature for 20 to 30 minutes before baking, and add roughly 10 to 15 minutes to the cooking time.
