Easy Breakfast Skillet Nachos

  • 8 ounces Breakfast sausage, bulk or removed from casings
  • 8 eggs Large eggs
  • 2 tablespoons Milk or half-and-half
  • 1 tablespoon Butter or neutral cooking oil
  • 8–10 ounces, about 6 cups Sturdy tortilla chips
  • 1 cup Canned black beans, drained and rinsed
  • 1 1/2 cups Shredded Mexican-blend cheese or cheddar-Monterey Jack
  • 1/2 cup Prepared salsa, plus more for serving
Fresh Toppings
  • 1/4 cup Thinly sliced green onions
  • 1 small avocado Small avocado, diced
  • 1/4 cup Fresh cilantro, chopped
  • 1 jalapeño, optional Jalapeño, thinly sliced
For Serving
  • 1/4 cup Sour cream
Seasoning
  • To taste Salt and black pepper

Method
 

Step-by-Step
  1. Heat a large ovenproof skillet over medium heat. Cook the breakfast sausage for 5–7 minutes, breaking it into small pieces, until browned and fully cooked. Transfer it to a plate, leaving about 1 tablespoon of fat in the skillet; add oil if needed.
  2. Whisk the eggs with the milk, 1/4 teaspoon salt, and a few grinds of black pepper. Melt the butter in the skillet, add the eggs, and cook for 2–3 minutes, stirring gently, until just set. Remove the skillet from the heat because the eggs will continue cooking in the oven.
  3. Heat the oven to 400°F. Arrange about half of the tortilla chips in the skillet, then add half of the sausage, black beans, scrambled eggs, and shredded cheese. Repeat with the remaining chips and toppings.
  4. Bake for 5–7 minutes, until the cheese is melted and bubbling. For lightly browned cheese, broil for 30–60 seconds, watching the skillet closely.
  5. Top the hot nachos with salsa, green onions, diced avocado, cilantro, optional jalapeño, and sour cream. Serve immediately.

Notes

Use thick, sturdy tortilla chips and drain the beans well to help prevent sogginess. Cook the eggs only until barely set before baking so they remain tender. Chorizo can replace breakfast sausage, and refried beans can replace black beans.
