  • 4 cups Fresh blueberries
  • 1/2 cup Granulated sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
Cobbler Topping
  • 1 cup All-purpose flour
  • 1/2 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/4 cup Cold unsalted butter, cut into small pieces
  • 1/3 cup Milk or buttermilk

Method
 

Step-by-Step
  1. Heat the oven to 375°F (190°C) and lightly butter an 8-inch square or 9-inch round baking dish.
  2. Combine the blueberries, 1/2 cup sugar, cornstarch, lemon juice, optional lemon zest, and optional vanilla. Transfer the fruit mixture to the prepared baking dish.
  3. Whisk the flour, remaining 1/2 cup sugar, baking powder, and salt in a bowl. Cut in the cold butter until coarse crumbs form.
  4. Stir in the milk or buttermilk just until a soft, slightly lumpy dough forms. Do not overmix.
  5. Drop spoonfuls of dough over the blueberries, leaving a few small gaps so steam can escape.
  6. Bake for 35–45 minutes, until the topping is golden brown and blueberry juices bubble around the edges. If using frozen blueberries without thawing, the cobbler may need an extra 5–10 minutes.
  7. Cool for at least 10–15 minutes before serving. Spoon the warm cobbler into bowls and top with vanilla ice cream or whipped cream.

Notes

Keep the butter cold and mix the dough only until combined for a tender topping. Cornstarch thickens the fruit juices, and the filling becomes noticeably thicker as the cobbler rests. When berries are especially sweet, the filling sugar may be reduced to 1/4 cup.
