- Heat the oven to 350°F (175°C). Grease a 9-inch round cake pan or an 8-inch square pan, then line the bottom with parchment.
- Toss the blueberries with 1 tablespoon of flour. In a separate bowl, whisk together the remaining flour, baking powder, and salt.
- Beat the softened butter and sugar for 2 to 3 minutes, until light and fluffy. Add the eggs one at a time, mixing after each addition, then blend in the vanilla and lemon zest if using.
- Add the dry ingredients in two or three additions, alternating with the milk or buttermilk. Mix only until the batter is combined.
- Fold in about three-quarters of the blueberries. Spread the batter into the prepared pan, scatter the remaining berries over the top, and sprinkle with coarse sugar if desired.
- Bake for 40 to 50 minutes, until the center is set and a toothpick inserted into the center comes out clean or with a few moist crumbs. Cool in the pan for 10 to 15 minutes, then transfer to a rack.
Notes
Room-temperature ingredients help the batter mix evenly. Frozen blueberries may be used without thawing; toss them with flour while frozen and expect approximately 5 to 10 additional minutes of baking. Check the center rather than a spot directly beside a blueberry.
