Easy Blueberry Butter Cake

A tender, buttery snack cake filled with fresh blueberries and finished with an optional lemon-sugar topping. It is simple enough for a weekday bake yet pretty enough for brunch.

Cake
  • 1/2 cup (113 g) Unsalted butter, softened
  • 3/4 to 1 cup (150-200 g) Granulated sugar
  • 2 eggs Large eggs, room temperature
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups (188 g) All-purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Fine salt
  • 1/2 cup (120 ml) Milk or buttermilk
Fruit
  • 1 1/2 to 2 cups (225-300 g) Fresh blueberries
  • 1 tablespoon All-purpose flour for tossing with blueberries
Optional Topping
  • 1 teaspoon Finely grated lemon zest
  • 1 tablespoon Coarse sugar

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9-inch round cake pan or an 8-inch square pan, then line the bottom with parchment.
  2. Toss the blueberries with 1 tablespoon of flour. In a separate bowl, whisk together the remaining flour, baking powder, and salt.
  3. Beat the softened butter and sugar for 2 to 3 minutes, until light and fluffy. Add the eggs one at a time, mixing after each addition, then blend in the vanilla and lemon zest if using.
  4. Add the dry ingredients in two or three additions, alternating with the milk or buttermilk. Mix only until the batter is combined.
  5. Fold in about three-quarters of the blueberries. Spread the batter into the prepared pan, scatter the remaining berries over the top, and sprinkle with coarse sugar if desired.
  6. Bake for 40 to 50 minutes, until the center is set and a toothpick inserted into the center comes out clean or with a few moist crumbs. Cool in the pan for 10 to 15 minutes, then transfer to a rack.

Notes

Room-temperature ingredients help the batter mix evenly. Frozen blueberries may be used without thawing; toss them with flour while frozen and expect approximately 5 to 10 additional minutes of baking. Check the center rather than a spot directly beside a blueberry.
