  • 2 packages (13 ounces each) Frozen cheese blintzes
  • 1 21-ounce can Blueberry pie filling
Sour-Cream Topping
  • 1 cup Sour cream
  • 1/2 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 eggs Large eggs
For Serving
  • Optional Additional sour cream
  • Optional Fresh blueberries
  • Optional Confectioners’ sugar

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Lightly grease a 9-by-13-inch baking dish so the casserole portions release more easily after baking.
  2. Arrange the frozen cheese blintzes in a single layer in the prepared dish. Use them straight from the freezer; thawing is not necessary and may make them harder to arrange neatly.
  3. Spoon the blueberry pie filling over the blintzes and spread it as evenly as possible. Try to cover the surface from edge to edge so each serving receives plenty of blueberry flavor.
  4. Whisk the sour cream, granulated sugar, vanilla extract, and eggs together in a bowl until smooth. Continue whisking until the sugar is distributed and no visible streaks of egg remain.
  5. Pour the sour-cream mixture evenly over the blueberry layer. Bake the casserole uncovered for 35–40 minutes, until the topping is set and the casserole is hot throughout.
  6. Remove the dish from the oven and let it stand for 5–10 minutes. Serve warm with optional sour cream, fresh blueberries, or a dusting of confectioners’ sugar.

Notes

Keep the blintzes frozen while assembling the casserole. Resting the baked dish for 5–10 minutes helps the topping firm up and makes serving easier.
