A creamy ranch pasta salad packed with bacon, tomatoes, lettuce, onion, and optional cheddar cheese. Serve it chilled as an easy dinner, lunch, or party dish.

Ingredients
  

Pasta Salad
  • 12 ounces rotini, bow-tie, or other short pasta
  • 8 ounces bacon, cooked crisp and crumbled
  • 1 1/2 to 2 cups cherry or grape tomatoes, halved
  • 2 cups romaine or iceberg lettuce, chopped
  • 1/2 cup red onion or green onion, finely diced
  • 1/2 cup shredded cheddar cheese, optional
Creamy Ranch Dressing
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1-ounce packet ranch seasoning mix
  • 2 tablespoons milk or buttermilk
  • 1/2 teaspoon garlic powder, optional
  • 1/4 teaspoon black pepper

Method
 

Step-by-Step
  1. Cook the pasta in well-salted water according to the package directions until al dente. Drain and rinse briefly under cold water, then drain thoroughly so the dressing will cling properly.
  2. Cook the bacon until crisp, drain it on paper towels, cool, and crumble. Reserve a little bacon for sprinkling over the salad just before serving.
  3. Whisk the mayonnaise, sour cream, ranch seasoning, milk or buttermilk, garlic powder, and black pepper in a bowl until smooth. The dressing should be slightly looser than the final consistency because the pasta will absorb some moisture.
  4. Place the cooled pasta, most of the bacon, tomatoes, onion, and optional cheddar in a large bowl. Pour over the dressing and toss gently until every piece is coated.
  5. Fold in the chopped lettuce shortly before serving so it stays crisp. Refrigerate the salad for 20 to 30 minutes if time allows, then stir and loosen with a small splash of milk if needed.

Notes

For a stronger bacon flavor, use up to 1 pound of bacon. You can replace the homemade dressing with 1/2 to 3/4 cup bottled ranch dressing. Add lettuce and some bacon just before serving for the best texture.
