A fresh and filling chopped salad featuring romaine, crispy bacon, tomatoes, red onion, optional cheddar and croutons, all tossed in a quick creamy dressing. This easy recipe makes four servings and is ready in about 25 minutes.

Ingredients
  

Salad
  • 8 cups Chopped romaine lettuce, about 1 large head
  • 6 slices Bacon
  • 2 cups Cherry or grape tomatoes, halved
  • 1/2 small Small red onion, thinly sliced or finely chopped
  • 1/2 cup Shredded cheddar cheese, optional
  • 1/2 cup Croutons, optional
Dressing
  • 1/3 cup Mayonnaise
  • 2 tablespoons Sour cream or plain Greek yogurt
  • 1 tablespoon Lemon juice or apple cider vinegar
  • 1 tablespoon Milk or buttermilk, plus more if needed
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Cook the bacon in a skillet over medium heat for 4-6 minutes per side, or until crisp. Transfer it to paper towels to drain, cool, and crumble.
  2. Wash and thoroughly dry the romaine, then chop it into bite-size pieces. Halve the tomatoes and thinly slice or finely chop the red onion.
  3. Whisk the mayonnaise, sour cream or Greek yogurt, lemon juice or apple cider vinegar, milk or buttermilk, garlic powder, salt, and black pepper until smooth. Add a little more milk if the dressing needs thinning.
  4. Place the lettuce, tomatoes, onion, crumbled bacon, cheddar cheese, and croutons in a large bowl. Toss with the dressing immediately before serving.
  5. Finish with extra bacon or freshly ground black pepper if desired, then serve right away.

Notes

Dry the lettuce thoroughly so the dressing clings to the leaves instead of becoming watery. For advance preparation, store the lettuce, vegetables, bacon, dressing, and croutons separately, then combine just before eating.
