Easy Black Bean and Corn Salsa

A fresh, no-cook Tex-Mex salsa made with black beans, corn, tomatoes, crisp vegetables, lime juice, cumin, and cilantro. It makes about 5 to 6 cups and is ideal for serving with tortilla chips.

Ingredients
  

Salsa
  • 1 15-ounce can Black beans, drained and thoroughly rinsed
  • 1 15 to 15.25-ounce can Whole-kernel corn, drained thoroughly
  • 1 cup Diced tomatoes
  • 1/2 cup Finely diced red onion
  • 1/2 cup Diced red bell pepper
  • 1 small jalapeno Small jalapeno, seeded and finely minced
  • 1/3 cup Fresh cilantro, chopped
Dressing
  • 1/4 cup Fresh lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon, plus more to taste Salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Drain and rinse the black beans under cold water until the water runs clear. Drain the corn thoroughly so excess liquid does not make the salsa watery.
  2. Add the beans, corn, tomatoes, red onion, red bell pepper, jalapeno, and cilantro to a large mixing bowl. Toss the ingredients gently so the vegetables remain distinct and colorful.
  3. Whisk the lime juice, olive oil, cumin, salt, and black pepper in a small bowl until the dressing is well combined. This quick mixture gives the salsa its bright, savory flavor.
  4. Pour the dressing over the bean and vegetable mixture. Stir gently from the bottom of the bowl until the lime dressing coats the ingredients evenly.
  5. Taste the salsa and adjust the lime juice, salt, or jalapeno according to your preference. Cover the bowl and refrigerate for 15 to 30 minutes before serving with tortilla chips.

Notes

Rinse canned beans until the water runs clear and drain the corn and tomatoes especially well. Frozen corn may be substituted after thawing. For a variation, add 1 large diced avocado just before serving, or use drained petite-diced canned tomatoes instead of fresh tomatoes.
