Ingredients
  

For the Beef
  • 1 lb (450 g) Ground beef, preferably 80–90% lean
  • 1/2 small onion Small yellow onion, finely diced
  • 1/2 tsp Fine salt
  • 1/4 tsp Black pepper
For the Bowls
  • 8 cups Chopped iceberg or romaine lettuce
  • 1/2 cup Shredded cheddar cheese
  • 1/3 cup Dill pickles, chopped
  • 2 tbsp Finely diced onion, optional
  • 1 tsp Sesame seeds, optional garnish
For the Big Mac Sauce
  • 1/2 cup Mayonnaise
  • 2 tbsp Yellow mustard
  • 2 tbsp Sugar-free ketchup
  • 2 tbsp Finely chopped dill pickles or dill relish
  • 1 tbsp Dill-pickle juice
  • 1/4 tsp Paprika
  • 1/4 tsp Onion powder

Step-by-Step
  1. Whisk the mayonnaise, yellow mustard, sugar-free ketchup, chopped dill pickles or relish, pickle juice, paprika, and onion powder together in a small bowl. Refrigerate the sauce while preparing the beef.
  2. Heat a large skillet over medium-high heat. Add the ground beef and finely diced yellow onion, then cook for 7–10 minutes while breaking up the meat, until browned and no longer pink.
  3. Drain excess fat if necessary, then stir the salt and black pepper into the cooked beef. For a stronger burger flavor, add a small splash of pickle juice to the skillet.
  4. Divide the chopped lettuce among four bowls. Top each bowl with the cooked beef, shredded cheddar cheese, chopped dill pickles, and optional diced onion.
  5. Drizzle the Big Mac sauce over each bowl and sprinkle with sesame seeds if desired. Serve immediately while the beef is warm and the lettuce is crisp.

Notes

Chill the sauce for 15–30 minutes when possible so the flavors blend. Iceberg gives the closest fast-food-style crunch, while romaine adds more flavor and nutritional value. Use sugar-free ketchup to keep the recipe keto-friendly. Do not overcook the beef; leaving some fat in the skillet keeps it moist and burger-like.
