- Whisk the mayonnaise, yellow mustard, sugar-free ketchup, chopped dill pickles or relish, pickle juice, paprika, and onion powder together in a small bowl. Refrigerate the sauce while preparing the beef.
- Heat a large skillet over medium-high heat. Add the ground beef and finely diced yellow onion, then cook for 7–10 minutes while breaking up the meat, until browned and no longer pink.
- Drain excess fat if necessary, then stir the salt and black pepper into the cooked beef. For a stronger burger flavor, add a small splash of pickle juice to the skillet.
- Divide the chopped lettuce among four bowls. Top each bowl with the cooked beef, shredded cheddar cheese, chopped dill pickles, and optional diced onion.
