Ingredients

Main Ingredients
  • 1 pound Bacon, cut into small pieces
  • 1 medium Medium onion, chopped
  • 2 cans, about 28 ounces each Canned baked beans
  • 1 15-ounce can Kidney beans, drained and rinsed
  • 1 15-ounce can Butter beans or lima beans, drained and rinsed
  • 1 cup Packed light brown sugar
  • 1 cup Ketchup
  • 2 tablespoons Yellow mustard

Method

Step-by-Step
  1. Heat the oven to 350°F. Lightly prepare a 9-by-13-inch baking dish if desired.
  2. Cook the bacon in a large skillet over medium heat until browned and crisp. Remove excess grease, leaving about 1 to 2 tablespoons in the pan.
  3. Add the chopped onion to the skillet and cook for about 5 minutes, stirring occasionally, until softened.
  4. Combine the baked beans, drained kidney beans, drained butter beans, brown sugar, ketchup, mustard, cooked bacon, and softened onion in a large bowl or baking dish. Stir thoroughly.
  5. Transfer the mixture to a 9-by-13-inch baking dish if it is not already in one. Bake uncovered at 350°F for 45 to 60 minutes, until bubbling and slightly thickened.
  6. Let the beans stand for 5 to 10 minutes before serving. The sauce will thicken slightly as the casserole cools.

Notes

Cook the bacon and onion before combining the ingredients for the best flavor and texture. Bake uncovered for the full hour for a thicker, more caramelized top; cover loosely with foil near the end if the beans brown too quickly.
