Easy Banoffee Pie Recipe (No-Bake Dessert)

A classic no-bake banoffee pie with a buttery biscuit base, thick caramel, ripe bananas, softly whipped cream, and dark chocolate shavings. This easy dessert makes 8–10 servings and is best chilled before slicing.

Ingredients
  

Biscuit Base
  • 250 g Digestive biscuits, finely crushed
  • 100 g Unsalted butter, melted
Filling
  • 397 g Dulce de leche or ready-made caramel
  • 3 bananas Medium ripe bananas, sliced
Topping
  • 300 ml Double cream or cold heavy whipping cream
  • 1 tablespoon Icing sugar, optional
  • 1 teaspoon Vanilla extract, optional
Decoration
  • 25-30 g Dark chocolate, finely grated

Method
 

Step-by-Step
  1. Line the base of a 20–23 cm (8–9 inch) loose-bottomed tart tin or springform pan with baking paper.
  2. Crush the digestive biscuits into fine, even crumbs, then stir them with the melted butter until every crumb is lightly coated.
  3. Press the biscuit mixture firmly over the base and slightly up the sides of the prepared tin. Chill for at least 30 minutes so the crust becomes firm.
  4. Spread the dulce de leche or ready-made caramel evenly over the chilled biscuit base.
  5. Slice the bananas and arrange them over the caramel in one or two layers.
  6. Whip the cold cream with the icing sugar and vanilla, if using, until soft or medium peaks form. Do not overwhip.
  7. Spoon or pipe the whipped cream over the bananas, then finish with finely grated dark chocolate.
  8. Chill the assembled pie for another 30–60 minutes, or for 1–2 hours when you want the cleanest slices.

Notes

Use ready-made dulce de leche or canned caramel rather than ordinary evaporated milk, which is not thick enough for this pie. Add bananas shortly before serving, or brush them very lightly with lemon juice to slow browning. Refrigerate covered and eat within 24 hours for the best banana texture; the pie can be kept for up to 2 days, although the bananas may darken and release moisture.
