- Bake the 9-inch pie crust according to its directions and cool it completely. A purchased pre-baked pastry shell or graham-cracker crust may also be used.
- Whisk the sugar, flour, and salt in a saucepan. Gradually whisk in the milk and egg yolks until smooth, then cook over medium heat while whisking constantly until thick and gently boiling.
- Continue cooking the thickened custard for about 1–2 minutes. Remove the pan from the heat and stir in the butter and vanilla extract.
- Arrange half of the sliced bananas in the cooled crust and pour over half of the warm custard. Add the remaining bananas, cover with the remaining custard, press plastic wrap directly onto the surface, and chill for at least 4 hours.
- Whip the heavy cream with the powdered sugar and optional vanilla until medium-stiff peaks form. Spread or pipe the whipped cream over the thoroughly chilled pie just before serving.
Notes
Choose bananas that are ripe enough to be sweet but still firm. Add the banana slices shortly before assembling, and lightly coat exposed slices with lemon juice if needed. For the cleanest slices, chill the pie overnight when possible and add whipped cream just before serving.
