- Heat the oven to 350°F (175°C). Grease a 9 x 13-inch baking pan or line it with parchment.
- For the crumb topping, combine the flour, brown sugar, and cinnamon. Cut in the cold butter with a pastry blender or your fingertips until coarse crumbs form.
- Cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla and mashed bananas.
- Whisk the flour, baking soda, and salt in a separate bowl. Add the dry mixture to the banana mixture alternately with the sour cream, mixing only until combined.
- Spread the batter evenly in the prepared pan and scatter the crumb topping over the surface. Bake for 35-45 minutes, until the center is set and a toothpick comes out with a few moist crumbs.
- Cool the cake in the pan for at least 15 minutes before slicing and serving.
Notes
Use heavily speckled or overripe bananas for the best flavor and moisture. For more defined crumbs, chill the assembled cake for 10-15 minutes before baking. Plain Greek yogurt can replace the sour cream in an equal amount.
