- Place the pork chops in a shallow dish or resealable bag. Add the balsamic vinegar, olive oil, minced garlic, dried rosemary, salt, and black pepper to a bowl and mix well.
- Pour the marinade over the pork chops and turn them several times so every surface is coated. Cover the dish or seal the bag, then refrigerate for about 30 minutes.
- Heat a lightly oiled grill or grill pan over medium heat. Remove the pork chops from the marinade and pat them lightly dry to encourage better browning.
- Discard the used marinade and place the pork chops on the hot grill or grill pan. Cook for approximately 4–5 minutes per side, depending on thickness, until the center reaches 145°F (63°C).
- Transfer the cooked pork chops to a clean plate and let them rest for 3–5 minutes before serving. This gives the juices time to settle so each bite stays moist.
Notes
Use an instant-read thermometer instead of relying only on cooking time. Do not marinate substantially longer than a few hours because the vinegar can affect the texture, and never use the uncooked marinade as a sauce unless it is boiled thoroughly first.
